Melt 1 stick of butter in a large skillet or pot. Once the butter is melted, add the apples, a few dashes of cinnamon, 1/4 cup brown sugar, and 1 tsp. vanilla extract. Stir to combine. Cover and simmer on low heat for fifteen minutes. While the apples simmer, cut the brioche into 1″ cubes. Reserve in a large bowl. Cooking Method. Step 1. Put the dish in the oven and bake for around 25 minutes or until the top is golden, crisp and smelling amazing.

Instructions. Pre heat oven to 200C/400F/Gas 6. Put a layer of brioche in the bottom of an ovenproof dish or roasting tin. Spread over a generous spoonful of jam and then add another layer of brioche, repeating until the dish is full. Pour over the custard into a jug and add 100ml water.
