While you can't remove a mob's AI, you can keep it in one location by placing an always active repeating command block with the command tp @e [type=] . For example, tp @e [type=zombie] 0 4 0 which on a superflat world would keep the zombie in place at 0, 0. To make an entity invulnerable, you need to use /effect.

This can be from curing a random zombie villager that already happens to have the Nitwit role, or from introducing one of your green-robed friends to a zombie and then curing them after they’ve turned.
Jockey refers to a naturally spawned mob riding another mob. Jockeys are named based on the mob being ridden. They also follow the spawning patterns of the bottom mob. Set up a sorter that will sort out iron. This works because zombies have a small chance to drop iron when "player killed". A player kill means that the entity dies within 5 seconds of player interaction with that entity. Throwing an egg at an entity is considered an interaction. Hence, with enough time, a measly amount of iron can be farmed.
I think in Bedrock it is not possible. To prevent Villagers to grow up you have to set the age via NBT-Tag. Bedrock does not support NBT-Tags - you can spawn Baby Villagers with /summon villager ~ ~ ~ minecraft:entity_born. but the will grow up. Maybe it is possible via datapacks
